Ikura Price Reached a Record High in 2025 Amid a Drastic Reduction in Hokkaido
The record-low fall chum catch has led to an unprecedented decline in Hokkaido-produced ikura salmon caviar, driving prices to record highs. According to estimates by the Hokkaido Fisheries Cooperative Association, last year's supply of Hokkaido-produced ikura (salted, soy sauce-marinated, and green frozen) is projected at around 440 tons, a 70% decrease from the previous year.
