Tokyo Island to Produce Caviar Amid Poor Spiny Lobster Counts

Tokyo will begin producing locally farmed caviar on Kozushima Island amid a decline in the number of spiny lobsters.
The Tokyo metropolitan government aims to cultivate sterlet sturgeon, which produce roe used to make caviar, creating a new income source for local fishermen. The caviar is expected to be on sale in jars and other forms by fiscal 2030.
