What Makes P.E.I. Oysters So Special?
Due to Prince Edward Island’s unique geology, oysters that lay in its waters are better able to take advantage of key nutrients.
That’s the opinion of Jason Woodside, a professional oyster shucker and former Canadian champion, who explained to The Guardian in a June 17 interview how P.E.I. oysters differ from those elsewhere worldwide.
“Basically, in short, it has to do with the bedrock, which is high in iron and the soil, which is high in iron,” he said.
