Fish Taco Chain Rubio’s Restaurants Files for Bankruptcy
The parent company of Rubio’s Coastal Grill, Rubio’s Restaurants filed for Chapter 11 bankruptcy on Monday. The company has about $82 million in debt and cited the COVID-19 pandemic as why it decided to take this path.
There are nearly 170 Rubio’s locations operating in California, Arizona and Nevada. In May and June, the company permanently closed 26 restaurants, wiping all locations in both Colorado and Florida.
