Sustainable Seafood Restaurant Opens in Harajuku, Tokhyo
The restaurant "Cynthia Blue" opened on September 11 in Harajuku, Tokyo. It offers dishes centered on sustainable seafood. Shinsuke Ishii is the owner-chef who also owns the Michelin-starred French restaurant "Cynthia" in Shibuya-ku, Tokyo. He is also the leader of Chef's for the Blue, a volunteer group of chefs. Cynthia Blue uses ecolabel certified products and underutilized fish as materials.
