The wholesale beef market came under some pressure last week as Father's Day buying was in the rearview and only limited bookings for the Fourth of July were in play. The Choice cutout, which represents a composite value of the carcass based upon prices paid for primal cuts, fell 0.83% while Select was down 1% week over week.
