The beef market edged slightly higher last week, though demand was easing by week's end. The Choice cutout, which represents a composite value of the carcass based upon prices paid for primal cuts, rose 0.83% while Select was up 1.12% week over week. Post-Super Bowl demand typically results in a lackluster beef market scenario in February, with the exception of foodservice demand for Valentine's Day which often benefits the rib complex.
