Lobster meat market prices have climbed to all-time record levels this summer as seasonal demand among foodservice operators in the US has been met with a more limited supply of the product compared to past years.
In early week trading, Urner Barry prices for dry Canadian cooked 2 lb claw and knuckle lobster meat, reached $20.20 per pound. This is an all-time record price for the product, topping the previous $19.50 per pound record average set in 2012...
