Meat and Poultry Markets Mixed Last Week, Seasonal Patterns in Play

Last week's Choice beef cutout, which represents a composite value of the carcass based upon prices paid for primal cuts, was up 1.70% while Select rose 1.60%. Certain cuts advanced as seasonal support for grilling items improved slightly.
Pork supplies were again in excess last week as slaughter rates remained elevated due to positive packer margins. Urner Barry's pork carcass cutout fell $1.35/cwt over the course of the week. Both red meat proteins look anxiously to the spring and summer grilling season for the seasonal boost in demand.
