The truth about scallops
Ah, the two sides of seafood: It’s unequivocally one of the healthiest proteins you can consume, but it’s anything but inexpensive.
Although cod prices are high, the real price shocker these last few years has been scallops. As a result, there has been a "whole lotta cheating going on."
Ironically, the cheating has been sanctioned by the U.S. government. In a process known as soaking, chemicals (including sodium tripolyphosphate) are added to shucked scallops, which enables them to absorb more water. This reduces the amount of actual scallop meat in every pound that is purchased, keeping prices "artificially" lower.
Unfortunately, many retailers and restaurants ascribe to this practice. Generally, everyone is in the loop on this, except the consumer!
