Prawn farmers and fishermen are hard at work to meet the holiday demand for the iconic Australian finger food.
One week out from Christmas, plenty of people were packed like sardines into the Sydney Fish Markets, hopeful of snapping up a bargain.
But it's in the pristine waters off Port Douglas where the Santiego prawn trawler is collecting some of the sweetest shellfish in the world.
